Today, I am going to share with you a delicious and simple recipe for Rajma Masala. Rajma Masala is a popular North Indian dish made with kidney beans and a blend of aromatic spices. It is a perfect comfort food that can be enjoyed with rice or roti. So, let’s get started!

Ingredients for Rajma Masala:

  • 1 cup kidney beans (rajma)
  • 2 medium-sized onions, finely chopped
  • 2 medium-sized tomatoes, pureed
  • 2-3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder

Instructions:

  1. Soak the kidney beans in water overnight or for at least 6-8 hours. Drain the water and rinse the beans before cooking.
  2. In a pressure cooker, add the soaked kidney beans along with 4 cups of water and a pinch of salt. Pressure cook for about 15-20 minutes or until the beans are soft and cooked.
  3. In a separate pan, heat oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions and sauté until they turn golden brown.
  5. Add minced garlic, grated ginger, and slit green chilies. Sauté for a minute.
  6. Now, add the tomato puree and cook until the oil separates from the masala.
  7. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.
  8. Add the cooked kidney beans along with the water. Mix everything together.

  10. Cover the pan and let the rajma masala simmer for about 15-20 minutes on low heat, allowing the flavors to blend together.
  11. Garnish with fresh coriander leaves.
